Scottish Cherry Pudding
Mix 1/2 cup sugar and 1/2 cup flour with 1 quart of MLF sour cherries you
have seeded.
In a sifter combine:
1 cup sugar
2 cups flour
4 tsp baking powder
1/2 tsp salt
Blend:
1/2 cup Crisco
2 eggs until smooth with a mixer
Add: 2 eggs and continue beating
Alternate: 2/3 cup milk with the flour mixture beating until smooth.
Add: 2 tsp lemon juice
Fold the finished mixture into the cherry mixture with a spatula and pour
everything into 2 8² cake pans. Bake 1 hour @ 350oF. Top should be golden.
